Lemon Lime Tonic

This tangy juice is perfect as a late afternoon drink – perhaps even a mocktail for the warm summer evenings! Mint and cucumber have digestive properties and are cooling, whilst the lemon and lime are detoxifying and great for liver health.

IngredientsLemon lime

  • 100 ml lemon juice.
  • 100 ml lime juice.
  • 100 g rice malt syrup.
  • Ice, mint, cucumber, lemon and lime slices to serve.

Directions

  1. In a medium sized saucepan heat the lemon juice, lime juice and rice malt syrup, stirring continuously, until all the ingredients have combined.

     2. Remove the mixture from heat and allow to cool.

     3. To serve, place ice, mint, lemon and lime slices, and cordial in a large jug. Pour 1 litre of spring or mineral water           and enjoy.
